Abstract

Although milk is a complex of several groups of substances, its fat and solids-not-fat (S.N.F.) content have traditionally been used to measure, and pay for, the quality of the wholemilk farmer's product.

A number of automatic milk testing instruments have been developed over the past 10 years to determine fat and protein levels in milk at a low cost per sample. This report gives some results of the Department's research with the Infra Red Milk Analyser (IRMA) to find the protein level of milk, and the relationship between protein and breed, stage of lactation, season and S.N.F. The research is supervised by Mr. D. N. Tulloch.
